Autumn in the Air and New Whiskey in the Bottle

 
 

Autumn is finally here. The leaves are beginning to be kissed with gold, morning temperatures whisper of the coming winter, and our ground is dry—which means corn harvesting at Old Ozarkian Distillery has begun. We’ve been blessed with what should be a great harvest of Jimmy Red, Boone County White, Pencil Cob, and Spilled Heritage corn this year, but our Bloody Butcher is a bust. Like our Troubled Land Whiskey states, “Life in the Ozarks [is] hard.”

While days here are filled with corn-picking, hand-shelling, cleaning, and hand-grinding our corn, over in the distillery mash is softly bubbling. The whiskey and bourbon in the white oak barrels is being forced out of the pores of the wood during the cool evenings and absorbed back inside as the day warms.

Presently we’re working on distilling out Thomas’ Original Rebellious Rye Whiskey in hopes we can soon have our 15 gallon barrel full and aging in our barrel house, ready for enjoyment in a few years. TruMo Whiskey has been pushed aside by bossy Thomas for the moment.

Belle of Beaufort is filtered and ready to bottle this week. She is a beauty—perfectly aged then rested in port wine barrels to add depth to her character. Look for her to make her grand debut soon.
